Lokal is a new food concept SPACE10 prototyped during London Design Festival 2017.
It shows a way to develop a new, local supply chain—one that enables us to grow more food within our cities. It's a salad bar whose ingredients are grown indoors, locally and vertically, using a hydroponic farming system, creating the perfect spring day, every day. Lokal showcases a delicious alternative to our conventional supply chain by bridging biology, engineering and design to reduce food miles, our pressure on the environment, and set new culinary standards around nutrients, flavours, freshness.
