Zero Waste Bistro

Shortlisted for installation design of the year at Dezeen Awards 2019, Zero Waste Bistro was a pop-up restaurant at the WantedDesign Manhattan fair built from recycled food packaging that composts all of its leftovers.

In May 2018, the Finnish Cultural Institute in New York invited chefs from the Helsinki-based Restaurant Nolla to bring their zero waste food philosophy to New York for four days for WantedDesign to coincide with the NYCxDesign festival. Co-curated by designers Harri Koskinen and Linda Bergroth, the temporary bistro focused on themes of circular economy, new material innovations, and sustainable design. Designed by Linda Bergroth, the installation was built from recycled materials, using sustainable design components. Zero Waste Bistro provided visitors with an immersive and stimulating experience through the design, tasting menu, and public programmes.
