Architects Collective has designed the Gruber Röschitz Winery, a pioneering organic wine production facility seamlessly integrated into the historic cellar lanes of Röschitz, Austria.

Gruber Röschitz Winery is a sustainable, semi-subterranean organic winery in Röschitz, Austria, merging craftsmanship and the cellar lane with innovative, climate-conscious design for production, hospitality and retail.

Merging traditional timber and loam construction with cutting-edge sustainable technology, the design ensures natural climate control through underground production halls while offering tasting rooms and offices with panoramic vineyard views.

In addition, photovoltaics, rainwater harvesting and clay cooling ceilings contribute to near energy self-sufficiency.

By fusing ancient cellar tunnels with contemporary wine-making innovation, this project sets a new benchmark for sustainable architecture – deeply rooted in place, respectful of heritage and visionary in execution.


This project has been longlisted in the mixed use project category of Dezeen Awards 2025.
